Fried Plantains with Liebe Shito Sauce
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1/2 cup Liebe Shito Sauce (Mild or Hot)
- Salt and pepper to taste
Instructions:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add onions and garlic, sauté until soft.
- Add mixed vegetables and cook for 3-4 minutes.
- Push the vegetables to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until fully cooked.
- Add cooked rice to the skillet, mixing well with the vegetables and eggs.
- Stir in soy sauce and Liebe Shito Sauce, mixing thoroughly.
- Season with salt and pepper to taste.
- Serve hot, with additional Liebe Shito Sauce on the side if desired.
