Fried Plantains with Liebe Shito Sauce

Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1/2 cup Liebe Shito Sauce (Mild or Hot)
  • Salt and pepper to taste

Instructions:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add onions and garlic, sauté until soft.
  3. Add mixed vegetables and cook for 3-4 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until fully cooked.
  5. Add cooked rice to the skillet, mixing well with the vegetables and eggs.
  6. Stir in soy sauce and Liebe Shito Sauce, mixing thoroughly.
  7. Season with salt and pepper to taste.
  8. Serve hot, with additional Liebe Shito Sauce on the side if desired.
