Jollof Rice with Liebe Shito Sauce
Ingredients:
- 2 cups long-grain parboiled rice
- 1/4 cup vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 2 cups chicken broth
- 1 cup mixed vegetables (peas, carrots, green beans)
- Salt and pepper to taste
- 1/2 cup Liebe Shito Sauce (Mild or Hot, to taste)
Instructions:
- Heat oil in a large pot over medium heat. Add onions and garlic, sauté until soft.
- Add bell pepper, diced tomatoes, and tomato paste. Cook for 5 minutes.
- Stir in thyme, curry powder, and paprika. Cook for another 2 minutes.
- Add rice, mixing well to coat with the sauce.
- Pour in chicken broth, bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- Add mixed vegetables, cover, and cook for an additional 10 minutes until rice is done.
- Stir in Liebe Shito Sauce, adjust seasoning with salt and pepper.
- Serve hot, garnished with additional Liebe Shito Sauce on the side.
