Kenkey with Liebe Shito Sauce

Ingredients:

  • 4 cups cornmeal
  • Water
  • Banana leaves or corn husks for wrapping
  • 1/2 cup Liebe Shito Sauce (Mild or Hot)

Instructions:

  1. Mix cornmeal with enough water to form a dough.
  2. Divide the dough into two parts. Cook one part over medium heat, stirring constantly, until it thickens (about 10-15 minutes).
  3. Mix the cooked dough with the uncooked dough until well combined.
  4. Shape the dough into small balls and wrap them in banana leaves or corn husks.
  5. Place the wrapped dough balls in a large pot, add enough water to cover, and cook over medium heat for 1-2 hours.
  6. Serve warm, with Liebe Shito Sauce on the side for dipping.
