Kenkey with Liebe Shito Sauce
Ingredients:
- 4 cups cornmeal
- Water
- Banana leaves or corn husks for wrapping
- 1/2 cup Liebe Shito Sauce (Mild or Hot)
Instructions:
- Mix cornmeal with enough water to form a dough.
- Divide the dough into two parts. Cook one part over medium heat, stirring constantly, until it thickens (about 10-15 minutes).
- Mix the cooked dough with the uncooked dough until well combined.
- Shape the dough into small balls and wrap them in banana leaves or corn husks.
- Place the wrapped dough balls in a large pot, add enough water to cover, and cook over medium heat for 1-2 hours.
- Serve warm, with Liebe Shito Sauce on the side for dipping.
